Akin to Burgundy, the seventh vintage of the ‘Le Luc’ Pinot Noir is layered and fragrant with notes of strawberry, rose petal, black cherry and earthier tones of clove and wild mushrooms. The palate reveals fine-grained tannins and vibrant acidity. The finish is complex and long. The grapes were hand harvested and 90% was lightly destemmed, with the remaining 10% kept as whole bunches. Fermentation occurred using indigenous yeasts in small open-top oak fermenters. Gentle pump overs and punch downs were carried out for integrated and finely structured tannins. Soft basked pressing into 228 litre French oak barrels was followed by 12 months ageing in barrel (30% new). The wine was transferred to stainless steel tanks and left to settle for three months prior to bottling, and was aged in bottle for another 18 months prior to release.
