In true Fairview style, we’ve selected unconventional Rhone varieties from our own vineyards to make this exciting Cap Classique. For the 2021 vintage we used Grenache Blanc, Viognier and Grenache Noir for the base wine. The outcome is a refreshing, crisp wine with reduced residual sugar, enhancing its potential for aging.
